Combine sugar, flour and salt. Whip egg yolks, add dry ingredients and mix well. Stir in lemon juice, zest and melted butter. Beat the two egg whites and fold into the other ingredients. Pour into a 9 inch pie shell. {I buy the Pillsbury pie crusts that come 2 to a package and use one of my own pie plates.}
This is such a good pie! The recipe is very old, an elderly woman, Mrs. Gilbert, gave the recipe to my mother years ago. It didn't include the cooking time. I simply cook it until the crust is golden brown and the top is browned. Since ovens vary I hesitate to give an exact time. Let it cool completely before slicing.
I've always loved lemon-flavored desserts for Spring and Easter and since today is such a beautiful, warm early-Spring day I thought you might like to try it too.
